Oven Roasted Fajita Chicken Wrap
Preparation Time: 20 minutes
Ingredients:
4 oz. Maple Lodge Farms shaved chicken Fajita Oven Roast
1 oz. Julienne cut red pepper
1 oz. Julienne cut zucchini peeled and cut to 2" length
1 oz. Salsa flavoured cream cheese spread
1 tbls butter or margarine
1 large leaf of red or green leaf lettuce
1 large 12" or 10" tortilla shell
plum tomato, seeds removed, diced small
salt and pepper for seasoning
Instructions:
On a large tortilla shell, butter the whole shell right to the edges
as this will help the edges to stick while rolling.
Lay the leaf
lettuce on the wrap and spread the cream cheese on top of the leaf
lettuce. At the bottom of the leaf lettuce (closest to you) layer
the shaved chicken, red peppers, zucchini, tomatoes and salt & pepper.
Now start to roll up the wrap by starting at the bottom, roll away
from you, pulling in the sides as you go into the final shape; it
should look like a burrito or spring roll. Place two toothpicks into
wrap to hold and cut on a diagonal. It is very colourful and delicious.
Serve with tortilla chips.
